Innovative technology for the production and bottling of sparkling wine and the method of organizing production as factors for improving the quality of locally produced wine products

The main goal of the project: - improving the quality of sparkling wine products (sparkling wine) produced from local crops, intended for domestic consumption. Detailed objectives of the project: - improvement of viticulture technology useful for the production of sparkling wine, - improvement of the sparkling wine bottling process, - developing a strategy for the sale and marketing of sparkling wine on a regional scale with the participation of one intermediary, supporting the market of local products and producers. The project will address the following issues: - optimization of the sparkling wine production process, - knowledge and information on the recommendations for the cultivation of vines for sparkling wines, - infrastructure enabling for the proper preparation of the must, - research on the production of sparkling wines in Poland, - promoting brands of regional sparkling wines, shortening the short supply chain as a way for sparkling wine producers to increase r

The operation is a two-stage project. The following activities are planned as part of the project: - making investment purchases, - making purchases to conduct planned research, - conducting research, - conducting an analysis of wines available on the market - testing the quality of sparkling wines of domestic production - development of a base of still wines for the production of sparkling wines with enhanced qualities - carrying out an analysis of the wines produced under the project - preparation of a report, - conducting consultations with consortium members regarding the implementation of a significantly improved method of organizing the bottling of sparkling wine, - building a line from purchased subassemblies, - conducting research on the current methods of organizing the production of sparkling wine on wine farms, - conducting research on a new method of organizing the production of sparkling wine at consortium members using purchased investment equipment - profitability study, - laboratory verification of the quality of the finished product, - conducting an assessment of the attractiveness of the sparkling wine market in Poland, - developing a marketing strategy for product entry, - developing a product sales strategy for the local market.

Reasons for the creation of the project: - dynamic, annual increase in the production of sparkling wine in Poland, - dynamic growth in the number of entities producing wine from their own crops, - lack of research on the production of sparkling wines in Polish conditions, - lack of sufficient experience among wine producers in the production of wines from their own crops, - insufficient retrofitting of the winery with infrastructure allowing for proper must preparation, - high share of imported sparkling wines in the market, which account for nearly 98% of consumption. - lack of promoted brands of regional sparkling wines.

The aspect facilitating the implementation of the obtained results is the close cooperation between the members of the Consortium. It will contribute to the exchange of knowledge, experience and the latest research knowledge as well as its wide dissemination and implementation among interested parties, including wine producers. The diverse composition of the GO: Frizzy Bubbles consortium guarantees high project merit and the introduction of project results to agricultural production practice.

The main benefits of applying the results of the operation: - use of the obtained research results in agricultural practice - use of disseminated knowledge on the production of sparkling wine in economic or agricultural activities - producing wines of better quality, which will be characterized by: 1) high taste and aromatic properties 2) high content of biologically active compounds - the possibility of using innovative methods of production organization in the production of sparkling wine in economic or agricultural activity - the possibility of using modern agrotechnical equipment in the production of sparkling wine in economic or agricultural activity - possibility for wine producers to use the developed model of local brand promotion - an opportunity to increase revenues from the production of sparkling wines by farmers and wine producers.
