"Green Milk" Innovations in the production of raw cow's milk, its processing and launching of ripening cheese with increased nutritional values

The object of the operation “Green Milk” is to create a group of various cooperating entities operating in the agricultural environment. The ultimate goal of this activity will be on the one hand to maximize the income of participating milk-producing farms/farmers through production of milk with high biological value, and, on the other hand, also for the operation participants, to present the consumers with an offer of innovative food products in the form of maturing cheeses made from this milk. The main objective of the project is to develop an innovative model for production of milk and maturing cheeses with unique chemical components and enhanced nutritive qualities, effectively enriched with 20-30% α-linolenic polyunsaturated fatty acid (omega-3), vitamin E, β-carotene and having a nutritionally beneficial ratio (less than 4:1) of omega-6 to omega-3 polyunsaturated fatty acids. The project foresees that the operation results will be of benefit to target groups operating in several areas. The benefits for farmers will include improved efficiency of permanent grassland use; optimization of dairy cow nutrition; and the possibility to produce milk with improved biological properties, which will ensure a higher price at delivery to the dairy. As a result of the operation, the milk purchaser will obtain raw milk with enhanced quality and technological suitability compared to the milk from conventional farms. The higher quality raw material will serve as a basis for making maturing cheeses with specific, high biological and health quality. Production of the novel range of innovative cheeses will allow dairy cooperatives to extend their offer for the regional and national markets. The results of the operation will also benefit the consumers, in particular those who attach growing importance to the quality of marketed food, its safety, naturalness, production quality, and health benefits.
