The subject of the operation concerns a product innovation concerning the development of a prototype of a new device for pitting soft fruits, unmatched on the market, with minimal disturbance to the structure of the fruit. The expected result of the operation is to be a prototype of a pitting device that uses ultrasonic technology combined with the action of a vacuum to remove the stone. The beneficial effect of the use of ultrasound (ultrasonic knives) in the process of cutting various materials was confirmed by a literature review. In the solutions of fruit stoners available on the market, the method of cutting and then forcing the stone through the fruit is used, which in turn causes the structure of the fruit to be torn apart by the pushed stone. Local fruit processing producers should be interested in the new ultrasonic technology of pitting cherry fruit. Fruit processors who want to obtain products of good quality, desired physical properties and better taste and nutritional values ​​should implement new pitting processes based on e.g. ultrasonic technology. The main goal of the planned operation is to obtain pitted cherries, the fruit of which will be characterized by minimal damage to the internal and external structure after the pitting process. The implementation of the main goal will consist of two specific objectives: development and design of a prototype device for cherry pitting, and the production and implementation of innovative cherry pitting technology. The choice of the assortment in the form of cherries is justified by the preferences of the fruit market and the group of consumers, which are represented by the confectionery industry and there are companies involved in drying, candying fruit. The planned implementation of the project is in line with the prevailing trends in natural food. The implementation of the specific objectives will contribute to the qualitative change of the product. The scope of the operation's impact will be local, due to the small scale of production of pitted cherries in the processing plant, which is part of the operational group. However, taking into account the growing group of recipients of this type of products, the developed innovative technology will be able to be implemented in other regions of Poland and Europe.
