Microbiological contamination of food is a significant problem for food producers and requires constant control at every stage of the production process. There are many methods of decontamination of plant materials, leading to the removal or reduction of microorganisms. The use of various hygienization methods is effective in reducing the number of infecting microflora, but it is associated with the loss of valuable biologically active compounds. Therefore, alternative technologies are being searched for, which would allow to eliminate the above-mentioned disadvantages. Because of that, the main goal of the operation will be to develop a method of decontamination with the use of ozone that will ensure an effective reduction in the number of infecting microflora and will not affect the chemical composition of the raw material exposed to ozone. The operation will end with the implementation of developed and proven solutions for the purification of spice plants with ozone into the business practice of Vega Dry. The process carried out in the consortium member's plant will be fundamentally changed (production organization method, production technology). An innovative processing method will be described that can be used on an industrial scale (economically justified, profitable) by entities processing spice plants. Carrying out innovative marketing activities at the final stage of the operation will allow Vega Dry to achieve tangible economic benefits. The Lodz University of Technology provides for a broad description of the results of the planned research and the presentation of conclusions from the implementation of innovative solutions in activities carried out on an industrial scale. The implementation of the operation will enable the first in Poland implementation of an innovative method of purification of spice plants using ozone on an industrial scale, offering the market significantly improved agricultural products (spice plants with high microbiological purity, preserved nutritional values and high organoleptic values, which can be maintained during storage).
